The baby eels in garlic sauce
The required ingredients
- ½ cup of white wine
- Crushed Chile pepper flakes
- 10 ounces of cleaned baby eels
- Pepper and salt
- 2 minced garlic cloves
- 2 tablespoons of pure olive oil
- In a sauté pan, heat the oil.
- Add the garlic and then the baby eels. Sauté them until they cook fully.
- Add the wine and then season with pepper, salt, and crushed red pepper
- Simmer until the eels’ meat turn opaque.

The cacciuco fish stew
The required ingredients
- 5 pounds of seafood, such as eels, prawns, small octopus, crawfish.
- 2 carrots
- 2 hot chili peppers
- ¾ cup of pure olive oil
- ½ cup of chopped parsley
- 2 tablespoons of pure olive oil
- 2 celery stalks
- 2 tablespoons of garlic, chopped
- 2 cups of onions
- 2 bay leaves
- 2 cups of red wine

- Clean the fish and cut off the heads. The smaller fish can be cut into pieces that are 3-inch
- Use the pepper and salt to season the fish
- In a large pan heat about ¼ cup of oil. Add the vegetables when the oil is hot. Sauté them for about 2 minutes
- Season with the pepper and salt. Add garlic, parsley, peppers, thyme, bay leaves, and the fish heads.
- Sauté for about 4 minutes more. Ensure that the fish heads are brown.
- Add the wine and boil. Reduce the heat and simmer until the wine reduces by a half. This should take about a half an hour.

- Dredge the eel in flour and sear it in a sauté pan over medium heat. This should take about 7 minutes.
- Add the wine and cook until it reduces by a half.
- Add the butter and cook until it melts and slightly change to brown.

The required ingredients
- A cup of flour
- Lemon
- 4 tablespoons of sunflower oil
- A teaspoon of chopped basil
- A medium filleted and skinned eel
- 3 minced garlic cloves
- A teaspoon of red pepper
- Mix the flour, pepper flakes, and basil in a small bowl
- Slice the eel into small cutlets of about 2-inches thick.
- Squeeze the lemon juice over the cutlets.
- Sprinkle the flour mixture on both sides of the cutlets and set them aside.
- In a skillet, heat the oil over medium-low heat. Fry the minced garlic until it is soft.
- Add the cutlets to the pan and fry until the eel is cooked and the coating is crispy. This should take about 3 minutes.
- Allow the eel cool slightly before you serve.

- Combine the oil, bay leaves, vinegar, pepper, salt, and the bread crumbs.
- Marinate the eel in the mixture for about 3 hours. Ensure that you turn them frequently.
- Place the pieces of eel on skewers and alternate with the bay leaves.
- Put the skewers on the baking sheet that is greased. Bake them in the oven at 375 degrees, for about a half an hour.
- Brush them with the remaining marinade as you cook.
